how to make some pico shrimp

quick and easy recipe for shrimp
Shrimp is a very versatile food, you can do alot with it. I am gonna tell you how to make a complete meal in like 20 min.
What you will need:
1 pound of shrimp (whatever kind you prefer) deveined, and peeled
tomotoes, onions, cilantro, lime, avacados, asparagus, bacon, sour cream, and some jalapeno salt.
To get started chop up the tomatoes, onions, and cilantro.Cut them depending on your preference, if you like bigger chuncks or smaller, whatever you like. In a small bowl combine the veggies, add lime juice from 1 whole lime, and add a little of the rind, not too much, i would recommend about 1 teaspoon. Lime rind tends to be a little more bitter when cooked. Mix it together, and let sit for like 10 minutes.
While that is starting to cook (the acid in the lime cooks the shrimp), cut your avacadoes. Split them in half, take the bone out, and peel the skin off, and dice. Get your bacon, about 8 slices, put on microwave safe plate with paper towels, and pre-cook in the microwave. Do no fully cook the bacon, just get it to where its about to be crispy(you can tell) about 5 min. This is healthier because the paper towels absorb the bacon grease, cutting back on the fat. So the asparagus is not saturated with bacon fat.
Take the bacon and asparagus, and wrap 1 slice of bacon around a bunch of like 4 asparagus and toothpick it. Lay it on a cookie sheet, of pan of your choosing. Throw a little salt and pepper on it, some "evoo" (extra virgin olive oil) and pop it in the oven. Cook it for like 10 min. or until the bacon seems crispy. But be careful not to leave in too long, it will make the asparagus soggy. Bake that at about 350.
Now on to the shrimp, which have been marinating sweetly with that lime juice. Get a good size pan. Oil it with evoo, just a little and turn on the fire. Make sure the pan is nice and hot, then you just pour the whole mix, and hear it sizzle. You only have to cook it for like 5 min., make sure that your shrimp is cooked all the way. Right before you pull it off the fire, add about 1/2 cup of sour cream, and mix it. It will make a wonderful lime, sour cream sauce. You can season it with whatever you like, i use a little jalepeno salt, and some cajun seasoning. But to each his own. *You could serve it with some refried black beans and some tortillas.
Now comes the plating. So get a good serving dish, put the shrimp mix and top it off with the fresh avacadoes. Serve it with rice, pasta, or anything you like. This dish goes really good with the bacon wrapped asparagus, and it is super easy and cheap to make. Happy Eating!!!
